Existing resentments

Especially when you are teaching General Education courses at a Culinary College, you find students who walk in on the first day with resentments. I think it is important to be organized and to carefully lay out your syllabus and goals for the course, and most importantly explain why the skills taught can enhance their careers. Ask each student what they intend to achieve in the class.

It sounds like the students are resentful of taking what they consider "remedial" classes. In the eyes of the students, they don't need general education classes and it is a waste of their time. They want to get to the meat and potatos, (pun intended), because they already consider themselves experts. They just need the certificate or degree for the purposes of getting hired.
