Using the verb of the outcome/objective is the best way to determine what type of evaluation to use, but brainstorm multiple ways to evaluate, not just written tests.

Using the SOAP method can help with your assessment and aid in students understanding their steps for care plan for clinic

Developing a lesson plan after reviewing/creating your evaluation is an excellent teaching tool to utilize 

Using the verb to help guide how I want to assess them is the great way to come up with a lot of ideas

Breaking down SOAP notes and making the student understand the importance of what each section means.  Understanding that when they are in the clinic, they are being evaluated on what they learned during their time in school.

It is very helpful to remember the order of instructional design 

learning objective then assessment then lesson plan and sometimes breaking down the lesson plan into smaller foundational lessons.
