Is role playing an effective tool to use when a topics are introduce to students?

Role playing is a good activity. Usually, it works best after students have some content-specific learning under their belt. One exception may be a "before and after" scenario, where students do some role playing at the beginning, then repeat after the lesson is complete.

Are pop quizzes a good way to catch a students attention?

If we want to measure learning, one part of that is preparation. Personally, I would not use a pop quiz as an engagement tool, only an assessment tool.

I find in as I grow as an instructor I do a lot of role play to help my students finger out what I talking about or discussing with them

Role playing can very helpful depending on the topic. Memory and retention is often inhanced when students are able to go through the motions.
