What are some assignments that can be assigned to culinary students which will foster learning outside of the classroom?

The assignment my students receive on Day 5 of the class is a report on the classical Brigade. This report in APA format must compare the Classical Brigade from Ecoffier to the Modern Brigade used in the establishments today. They have the liberty of going to interview a Chef from a facility, compare maybe from their jobs that they are currently on or do the research on the internet. Some of my students have had some great sucess with this when interviewing a chef. A video was taken to show the kitchen and the chef talking about his kitchen staff and their duties. The student was also offered a job in the process.
