The importance of safety and sanitation!

What are some ways to emphasize the importance of safety and sanitation in the food service industry?

I do the same, by relating the subject to real life incidents and examples it really brings it into perspective

True. Real life examples are best.

It's even better if you can explain a story about a person with greater vulnerability, such as a small child. I find that if I ask my students to prepare their food (with respect to sanitation) as if they are planning to feed a toddler, they tend to take much more care with sanitation. Then I remind them to cook that way for everyone.

I like the idea of using a spacific age group or spacific person to help them relate. I also find big gasps of shock when I tell themt he USDA book on food born illnessesis over 400 pages long!

There are certainly plenty of food and sanitation stories to share! It really helps the students connect the dots to the course material.
