I find that by asking open-ended questions that ecourage dialog and conversation, with instructor-guided feedback, is a useful way to get students to interact and stretch beyond their own beliefs or intellectual boundaries.  It is important for the instructor to be well-versed in the topic and have the abilty to guide the discussion without losing control or going into "lecture" mode.  I find that I can learn from students using this method and learn to stretch a little myself!
