I feel your pain, Jeremy :) It would help, though, to experiment with one or two items by "piloting" the technology before actual implementation. Most administrators are open to this idea...
Have you thought about expanding the idea of video capture to develop digital portfolios for culinary students of their work? They could capture, edit and narrate their own demonstrations both for class work and for Internet distriubtion beyond the classroom. This would enhance both the immediacy and the authorship of student work.

Great, Jackie. I would suggest that the learner autonomy you mention is the most important ongoing skill we can develop in students. The more students learn how to learn for themselves, the more long term learning will be for them.

How can this challenged be addressed by teachers, Allen? How can teachers focus on more general outcomes as well as the specific course outlines and still protect the rigor of the course?
