You have the perfect opportunity to set the class right where you want them. Tell them your goals for them in the course, set ground rules for them, let them know what is expected of them during their stay in your course, be friendly not friends, and if you say something they should not do, tell them what concquences they might have to bear.

The best way to monitor and teach in any room is that I do not do a 4 tile shuffle. I am animated, I am always moving around, holding up lots of parts and equipment and I like to get the students involved by asking for their help with demonstrations and customer/manager scenarios.I find that the more you move around, the less sleepy they become, the more involved they are and then they aren't sure who I am going to call on next. This sort of keeps them on their toes in a way.

I am new to teaching but have been a manager for quite a while. This course will help me smooth out some of my rough edges!
