Signing the what will be required in class
I am glad I have them sign every thing we go over the first day of class. That is their time to understand and ask questions what will be expected. If they disagree later on, I have their signature to back me up.
I have not done this in the past. But, I am going to with my new classes beginning in November.
We have overall orientation sheets that each instructor uses, and I supplement that with my own policies and procedures sheet which all students must sign on the first day. We go through the policies in detail so that the students know exactly what will be expected of them during the class. I have found that students follow the policies and have fewer questions about expectations with this procedure.
On the first day of school it's important to review,sign & date all classroom & school rules and conduct. Make sure each student understand what is expected of them. I also give calendars for each class(lecture, lab,& computers). I assign team leaders or use a buddy system for all new students. This works great for me.

How would you have them "sign" it in an online environment?

This is a good strategy to follow. Not only do you have proof as you mentioned but it also lets the students know the importance you attach to the contents of the syllabus because you have them sign that they have received and reviewed it.
