Elliot,
I think staying current in the field that you teach is important as well as the instructional improvement growth needed. So taking a course in your field where you will see and learn about how the field is changing is critical for instructors. I don't know about a bartending class if you teach a wine course but I would think having the chance to go to winery and "shadow" workers as they gather the grapes, process them and then mix the various juices to create blends and flavors would be extremely valuable in teaching a wine course.
